The detail

Mangalitsas come from Hungary and are known for their curly, wool-like coat. They are a lard breed with rich, marbled meat and thick fat, prized by chefs and charcuterie makers, and they finish slowly.

What to weigh

Mangalitsas grow slowly and take much longer to finish. They produce more fat than lean meat, which suits specialty markets, not everyday pork.
