The detail
Ayam Cemani come from Java in Indonesia and are all black, including skin, meat, bones and organs, from a trait called fibromelanosis. They are rare, active and kept mostly for their look rather than eggs or meat.
What to weigh
Ayam Cemani lay few eggs and are flighty. Many birds sold as Ayam Cemani are crosses, so color and quality vary.
